
Easy Homemade Granola Recipe
* Gluten-free
* Vegetarian/Vegan
3 cups oats
1½ cups – raw nuts (combination of slivered or whole almonds, pecans, walnuts)
½ cup sesame or sunflower seeds
½ teaspoon ground ginger
¼ teaspoon cinnamon
½ teaspoon salt
½ cup coconut oil
½ cup organic maple syrup
½ teaspoon vanilla extract
Dried cherries, raisins, or other dried fruit
Mix together dry ingredients (through salt). Separately mix together coconut oil, maple syrup and vanilla.
Combine above.
Bake at 325 degrees for 30 minutes on a baking sheet. Stir after 15 minutes and then place back into oven for another 15 minutes. Remove from oven, stir again and add dried fruit. Let cool before storing in mason/glass jar. If storing for more than 2 weeks, keep it in the fridge/freezer.
Can easily double this recipe – this will require 2 baking sheets.
